Accidental strawberry mango jam.


I was trying to make pate de fruit but it did not solidify enough. I used apple pectin and my thermapen,  yet I still failed.  Oh well,  it tastes great.  Now,  I have to make some sourdough bread to go with all this jam.

I think the issue was my pectin. A baker friend has hooked me up with some special pectin, specifically for pate de fruit. I will try again in a few weeks.
