Today is a holiday hat trick; it’s the first day of Spring, International Day of Happiness and Macaron Day. Those things go together like spring and happiness and macarons!
Of course, I live in Vancouver and it is a bit hard to get in that spring time groove when it’s gloomy and rainy outside. Fortunately, I don’t have to leave the house to have my Macaron Day macarons because I made them myself.
I made Nanaimo Bar flavoured Macarons because I’m Canadian and my mom was born in Nanaimo and they are my birthright.
The recipe for these macarons is over on my ChocolateCodex.com website. These are not vegan. I’ve never been able to get such developed feet on my vegan macarons, but I will keep trying.
