I didn’t bake anything this week. There was no need to. I had two birthday parties to attend so there was plenty of cake.
The next two months are going to be pretty weird around here. I’m not going to be doing much baking. Instead, I’ll be spending my “free time” reading books and writing articles for our new chocolate website.

With so much reading to do, I’ll be turning to easy, uncomplicated foods. One of the easiest and most satisfying snacks I can think of is a ripe avocado with coconut sugar. I’ve been eating avocado sprinkled with brown sugar since I was a kid. I switched to coconut sugar because it’s the grown-up thing to do. Actually, I just like the flavour of coconut sugar when it is combined with avocado. It’s slightly nutty and just sweet enough to make me feel like I’m having dessert. I love dessert.

- 1 ripe avocado
- 2 tsp coconut sugar
Instructions
- Cut the avocado in half and remove the pit.
- Sprinkle the coconut sugar on top.
- Eat.
